Korean Noodle Dishes Part 2: Jjajangmyeon, Bibim-guksu, Kongguksu (한국의 면 요리 2탄: 짜장면, 비빔국수, 콩국수)

1탄이 국물의 온도로 나뉘는 국수였다면, 2탄은 소스로 나뉘는 국수입니다.
If Part 1 was about noodles divided by the temperature of the broth, Part 2 is about noodles divided by the sauce.

1. 짜장면, 검은 소스에 담긴 이민의 역사
1. Jjajangmyeon, a Black Sauce Carrying a History of Migration

짜장면은 중국에서 건너왔지만 지금의 형태는 한국에서 완성된 음식입니다.
Jjajangmyeon came from China, but the dish in its present form was completed in Korea.

1890년대 인천항에서 일하던 산둥 출신 노동자들이 고향 음식인 자장몐을 먹던 것이 출발점입니다.
It began with laborers from Shandong who worked at the port of Incheon in the 1890s and ate zhajiangmian, a dish from their hometown.

1900년대 초 인천 차이나타운의 화교 음식점을 거치며 한국인 입맛에 맞게 단맛이 더해졌습니다.
Passing through the Chinese restaurants of Incheon's Chinatown in the early 1900s, it gained sweetness to suit Korean tastes.

핵심은 춘장입니다.
The heart of the dish is chunjang.

콩을 발효시켜 만든 검은 장을 기름에 볶으면 짠맛이 누그러지고 고소한 단맛이 올라옵니다.
When this black fermented soybean paste is stir-fried in oil, its saltiness softens and a nutty sweetness comes forward.

여기에 돼지고기와 양파를 넣고 볶은 뒤 전분을 풀어 걸쭉하게 만든 것이 짜장 소스입니다.
Pork and onion are stir-fried in, and starch is added to thicken it into the jjajang sauce.

양파를 충분히 볶는 집일수록 소스가 답니다.
The longer a restaurant cooks its onions, the sweeter the sauce.

종류는 조리 방식으로 갈립니다.
The varieties differ by how they are cooked.

일반 짜장면은 소스를 미리 만들어 두었다가 면에 얹고, 간짜장은 주문을 받은 뒤 물을 넣지 않고 즉석에서 볶아 냅니다.
Standard jjajangmyeon uses sauce prepared in advance and spooned over the noodles, while ganjjajang is stir-fried to order without added water.

유니짜장은 고기를 곱게 갈아 넣어 부드럽습니다.
Yuni-jjajang uses finely minced pork, which makes it smooth.

짜장면 옆에는 언제나 단무지와 생양파, 춘장이 함께 나옵니다.
Pickled radish, raw onion, and a dish of chunjang always come alongside.

느끼함을 눌러 주는 역할입니다.
They are there to cut the richness.

생양파를 춘장에 찍어 먹는 것이 한국식이며, 처음 드시는 분도 부담 없이 시도해 보실 만합니다.
Dipping raw onion into the chunjang is the Korean way, and it is worth trying even on a first visit.

짜장면은 특정한 날의 음식이기도 합니다.
Jjajangmyeon is also a dish tied to particular days.

이사하는 날 짐을 옮기다 말고 바닥에 앉아 먹는 짜장면은 한국인에게 익숙한 장면입니다.
Sitting on the floor between carrying boxes on moving day to eat jjajangmyeon is a familiar scene for Koreans.

졸업식 날 가족과 함께 중국집에 가는 것도 오랜 풍습이었습니다.
Going to a Korean-Chinese restaurant with family on graduation day was a long-standing custom as well.

그리고 4월 14일 블랙데이에는 밸런타인데이와 화이트데이에 선물을 받지 못한 사람들이 검은 짜장면을 먹습니다.
And on Black Day, April 14, those who received nothing on Valentine's Day or White Day eat black jjajangmyeon.

슬픈 날처럼 보이지만 실제로는 친구들끼리 모여 웃으며 먹는 날에 가깝습니다.
It sounds like a sad occasion, but in practice it is closer to a day when friends gather and laugh over a bowl.

 

2. 비빔국수, 여름 입맛을 되살리는 붉은 국수
2. Bibim-guksu, the Red Noodles That Bring Your Appetite Back

비빔국수는 한국 가정에서 가장 자주 만들어 먹는 면 요리입니다.
Bibim-guksu is the noodle dish Korean households make most often.

삶은 소면을 찬물에 헹궈 물기를 뺀 뒤 양념에 비비면 끝이라, 준비 시간이 십 분을 넘지 않습니다.
Boiled somyeon is rinsed in cold water, drained, and tossed in sauce, so it takes no more than ten minutes.

양념의 핵심은 고추장이 아니라 신 김치와 식초입니다.
The key to the sauce is not the chili paste but sour kimchi and vinegar.

고추장만 넣으면 맵고 단맛만 남지만, 잘 익은 김치와 식초를 더하면 신맛이 매운맛을 밀어 올려 입맛을 살립니다.
Chili paste alone leaves only heat and sweetness, but well-fermented kimchi and vinegar lift the heat with acidity and wake up the appetite.

여기에 설탕과 참기름, 다진 마늘을 넣고 깨를 뿌립니다.
Sugar, sesame oil, and minced garlic go in, finished with a sprinkle of sesame seeds.

집집마다 배나 사과를 갈아 넣기도 합니다.
Some households also add grated pear or apple.

고명은 단순합니다.
The toppings are simple.

오이채와 김치, 삶은 달걀 반쪽이면 충분합니다.
Julienned cucumber, kimchi, and half a boiled egg are enough.

아삭한 오이가 씹히면서 매운맛을 중화시킵니다.
The crisp cucumber breaks up the heat as you chew.

비빔국수는 냉면과 자주 비교됩니다.
Bibim-guksu is often compared with naengmyeon.

두 가지 모두 차갑고 매울 수 있지만 성격이 다릅니다.
Both can be cold and spicy, but their character differs.

냉면은 육수와 면의 식감이 중심이고, 비빔국수는 양념의 균형이 중심입니다.
Naengmyeon centers on the broth and the texture of the noodles, while bibim-guksu centers on the balance of the sauce.

처음 한국 음식을 접하는 분에게는 맛이 곧바로 이해되는 비빔국수가 더 친숙하게 느껴집니다.
For someone new to Korean food, bibim-guksu tends to feel more approachable because its flavor makes sense immediately.

한국인이 비빔국수를 찾는 때는 대체로 정해져 있습니다.
There are set moments when Koreans reach for bibim-guksu.

더워서 밥이 넘어가지 않을 때, 고기를 구워 먹은 뒤 입가심이 필요할 때입니다.
When it is too hot for rice, and when something is needed to finish a grilled meat meal.

고깃집에서 식사 마무리로 냉면과 함께 메뉴에 올라 있는 이유입니다.
That is why barbecue restaurants list it alongside naengmyeon as a closing dish.

 

3. 콩국수, 콩을 갈아 만든 흰 국물
3. Kongguksu, a White Broth Ground from Soybeans

콩국수는 외국인에게 가장 설명하기 어려운 한국 국수입니다.
Kongguksu is the Korean noodle dish hardest to explain to a visitor.

흰 국물의 정체가 우유도 크림도 아니기 때문입니다.
The white broth is neither milk nor cream.

삶은 콩을 곱게 갈아 만든 콩국입니다.
It is kongguk, made by finely grinding boiled soybeans.

만드는 법은 단순하지만 손이 많이 갑니다.
The method is simple but laborious.

콩을 물에 불려 삶고, 껍질을 벗겨 곱게 간 뒤 차갑게 식힙니다.
Soybeans are soaked, boiled, peeled, ground fine, and then chilled.

백태를 쓰면 국물이 희고 담백하며, 서리태를 쓰면 회색빛이 돌고 고소함이 진합니다.
White soybeans give a pale, clean-tasting broth, while black soybeans give a grayish tone and a deeper nutty flavor.

좋은 콩국수집일수록 국물이 걸쭉하고 콩 냄새가 무겁지 않습니다.
The better the restaurant, the thicker the broth and the lighter the beany aroma.

먹는 방법에서 한국인들끼리도 의견이 갈립니다.
Koreans themselves disagree on how to eat it.

소금을 넣느냐 설탕을 넣느냐입니다.
Salt or sugar.

대체로 서울과 중부 지역은 소금, 남부 지역에는 설탕을 넣는 사람이 많습니다.
Broadly, salt is more common in Seoul and the central regions, sugar in the south.

식당에서는 두 가지를 모두 내주므로 조금씩 넣어 보고 정하시면 됩니다.
Restaurants put both on the table, so add a little of each and decide for yourself.

처음이라면 소금을 아주 조금만 넣어 콩 본래의 맛부터 확인해 보시기를 권합니다.
If it is your first time, add just a pinch of salt and taste the soybean itself first.

콩국수는 여름 한철 음식입니다.
Kongguksu is a dish of one season.

콩국이 쉽게 상하기 때문에 더운 계절에만 파는 집이 많고, 대개 여름 한정 메뉴로 붙어 있습니다.
The broth spoils easily, so many places serve it only in the hot months, usually listed as a summer-only item.

고기나 해산물이 들어가지 않아 채식을 하시는 분도 드실 수 있는 드문 국수이기도 합니다.
It contains no meat or seafood, making it a rare Korean noodle dish that suits a vegetarian diet.

 

4. 세 가지 국수를 주문할 때 알아 둘 것
4. What to Know When You Order These Three

세 가지는 파는 곳이 서로 다릅니다.
The three are sold in different places.

짜장면은 중국집, 비빔국수는 분식집이나 고깃집, 콩국수는 국수 전문점이나 여름철 한식당에서 찾으실 수 있습니다.
Jjajangmyeon at Korean-Chinese restaurants, bibim-guksu at snack shops or barbecue restaurants, and kongguksu at noodle specialists or Korean restaurants in summer.

한 식당에서 세 가지를 모두 파는 경우는 드뭅니다.
Rarely does one restaurant serve all three.

중국집에서는 짜장면과 짬뽕 사이에서 고민하게 됩니다.
At a Korean-Chinese restaurant you will find yourself torn between jjajangmyeon and jjamppong.

짬뽕은 매운 해물 국물 국수입니다.
Jjamppong is a spicy seafood noodle soup.

결정이 어려우면 짬짜면을 시키면 됩니다.
If you cannot decide, order jjamjjamyeon.

그릇이 반으로 나뉘어 두 가지가 한 번에 나옵니다.
The bowl is divided in half and both arrive together.

짜장면은 나오는 즉시 비벼야 합니다.
Jjajangmyeon should be mixed the moment it arrives.

소스가 면 아래로 가라앉으면 골고루 섞이지 않습니다.
Once the sauce settles beneath the noodles, it no longer combines evenly.

젓가락으로 아래에서 위로 크게 몇 번 뒤집듯 비비면 됩니다.
Use your chopsticks to turn it over from the bottom a few broad strokes.

옷에 튀기 쉬우니 앞접시나 휴지를 가까이 두시는 편이 좋습니다.
It splashes easily, so keep a small plate or napkins close.

콩국수는 국물을 남기지 않는 것이 좋습니다.
With kongguksu, it is best not to leave the broth.

국물 자체가 콩이라 영양이 그 안에 다 들어 있습니다.
The broth is the soybean itself, and all the nourishment is in it.

그릇을 들고 마시는 것도 실례가 아닙니다.
Lifting the bowl to drink it is not considered rude.
