Korean noodle dishes are divided by season and occasion.

1. 칼국수, 칼로 썰어 만든 따뜻한 국수
1. Kalguksu, Warm Noodles Cut by Knife

칼국수의 이름은 조리 도구에서 왔습니다.
The name kalguksu comes from a cooking tool.

칼로 직접 썬다는 뜻입니다.
It means the noodles are cut by hand with a knife.

밀가루 반죽을 얇게 밀어 접은 뒤 칼로 썰어 면을 만듭니다.
Wheat dough is rolled thin, folded, and then sliced with a knife to make the noodles.

기계로 뽑은 면과 달리 칼국수 면은 가장자리가 고르지 않습니다.
Unlike machine-extruded noodles, kalguksu noodles have uneven edges.

이 거친 표면이 국물을 잘 붙잡아 줍니다.
This rough surface grips the broth well.

면발이 두툼하고 쫄깃해서 씹는 맛이 좋고, 한 그릇을 다 비우면 속이 든든해집니다.
The noodles are thick and chewy with a satisfying bite, and finishing a whole bowl leaves you full and comforted.

칼국수는 국물로 성격이 갈립니다.
Kalguksu is defined by its broth.

닭을 오래 고아 만든 닭칼국수는 부드럽고 진합니다.
Dak-kalguksu, made by simmering chicken for a long time, is mild and rich.

바지락과 새우를 넣은 해물칼국수는 시원하고 개운합니다.
Haemul-kalguksu, made with clams and shrimp, is refreshing and clean on the palate.

소뼈를 우려낸 사골칼국수는 뽀얗고 묵직합니다.
Sagol-kalguksu, simmered from beef bones, is milky white and hearty.

어느 쪽이든 국물은 짧게는 몇 시간, 길게는 반나절 넘게 끓여 냅니다.
In every case the broth is simmered for several hours at least, and often for more than half a day.

좋은 칼국수집일수록 국물에 시간을 아끼지 않습니다.
The better the kalguksu restaurant, the less it spares time on the broth.

칼국수에는 겉절이 김치가 함께 나옵니다.
Kalguksu is served with geotjeori kimchi.

갓 버무려 아직 익지 않은 김치입니다.
This is freshly tossed kimchi that has not yet fermented.

매콤하고 아삭한 겉절이 한 조각을 국수와 함께 먹으면 담백한 국물 맛이 살아납니다.
Eating a piece of the spicy, crisp geotjeori together with the noodles brings the light broth to life.

한국 사람들이 비 오는 날 칼국수를 찾는 이유도 여기에 있습니다.
This is also why Koreans seek out kalguksu on rainy days.

2. 잔치국수, 기쁜 날에 나누어 먹는 국수
2. Janchi-guksu, Noodles Shared on Happy Days

잔치국수는 맛보다 의미가 먼저인 음식입니다.
Janchi-guksu is a dish whose meaning comes before its taste.

잔치는 결혼식이나 생일처럼 사람들이 모여 축하하는 자리를 뜻합니다.
Janchi refers to a gathering where people come together to celebrate, such as a wedding or a birthday.

옛날 한국에서는 이런 날에 큰 솥에 국수를 삶아 손님들에게 나누어 주었습니다.
In old Korea, noodles were boiled in a large pot on such days and shared with the guests.

이유는 두 가지입니다.
There were two reasons.

첫째, 국수는 많은 사람의 몫을 한 번에 만들 수 있어 잔칫상에 알맞았습니다.
First, noodles could be prepared for many people at once, which suited a banquet table.

둘째, 가늘고 긴 소면에는 오래 살라는 소망이 담겨 있습니다.
Second, the thin and long somyeon noodles carry a wish for a long life.

끊기지 않는 삶, 오래 이어지는 인연을 뜻합니다.
They symbolize an unbroken life and a bond that lasts.

이 풍습은 지금도 말 속에 남아 있습니다.
This custom still survives in everyday speech.

한국에서는 결혼 계획을 물을 때 "언제 국수 먹여 줄 거야"라고 말합니다.
In Korea, people ask about marriage plans by saying, "When are you going to feed me noodles?"

국수를 먹여 준다는 말이 곧 결혼식을 연다는 뜻입니다.
Feeding someone noodles means holding a wedding.

한국인 친구에게 이 말을 들었다면 결혼 시기를 묻는 것이니 당황하지 않으셔도 됩니다.
If a Korean friend says this to you, they are asking when you will marry, so there is no need to be puzzled.

잔치국수의 국물은 멸치를 우려내 만듭니다.
The broth of janchi-guksu is made by simmering dried anchovies.

맑고 담백해서 자극적이지 않습니다.
It is clear and light, never harsh on the palate.

그 위에 달걀지단, 애호박, 김을 가늘게 썰어 얹습니다.
On top go thin strips of egg garnish, young zucchini, and dried seaweed.

이렇게 얹는 재료를 고명이라고 부릅니다.
These toppings are called gomyeong.

노랑, 초록, 검정이 어우러진 고명은 보기에도 예쁘고, 잔칫날의 정성을 보여 줍니다.
The yellow, green, and black gomyeong is lovely to look at and shows the care taken for a celebration day.

값이 비싸지 않고 소화도 잘 되어 오늘날에는 특별한 날이 아니어도 일상적으로 즐기는 국수가 되었습니다.
It is inexpensive and easy to digest, so today it has become an everyday dish rather than one reserved for special occasions.

 

3. 냉면, 여름을 이기는 차가운 별미
3. Naengmyeon, a Cold Delicacy That Beats the Summer

냉면은 이름 그대로 차가운국수입니다.
Naengmyeon is, as its name says, cold noodles.

원래는 한반도 북쪽 지방에서 겨울에 먹던 음식이었습니다.
It was originally a winter dish of the northern regions of the Korean peninsula.

추운 방에서 살얼음이 언 동치미 국물에 국수를 말아 먹던 것이 시작입니다.
It began with noodles served in dongchimi broth topped with thin ice, eaten in a cold room.

지금은 반대로 한국에서 여름을 대표하는 음식이 되었습니다.
Now, conversely, it has become the dish that represents summer in Korea.

면은 메밀로 만듭니다.
The noodles are made from buckwheat.

메밀 면은 밀가루 면보다 질기고 툭툭 끊어지는 특유의 식감이 있습니다.
Buckwheat noodles are tougher than wheat noodles and have a distinctive texture that snaps apart.

육수는 소고기를 우려낸 맑은 국물이나 동치미 국물을 차갑게 식혀 씁니다.
The broth is clear beef stock or dongchimi liquid, served thoroughly chilled.

그릇째 얼음이 서걱거릴 만큼 차갑게 내는 집도 많습니다.
Many restaurants serve it so cold that ice crystals crunch throughout the bowl.

냉면은 지역에 따라 계통이 나뉩니다.
Naengmyeon branches into regional styles.

평양냉면은 국물이 심심하고 담백해 처음에는 밍밍하게 느껴질 수 있지만 먹을수록 깊은 맛이 납니다.
Pyongyang naengmyeon has a subdued, light broth that may taste bland at first, but reveals depth the more you eat.

함흥냉면은 국물 없이 매콤한 양념에 비벼 먹는 방식이 대표적입니다.
Hamhung naengmyeon is typically served without broth and mixed with a spicy sauce.

진주냉면은 해물로 낸 육수를 쓰고 고명이 화려한 것이 특징입니다.
Jinju naengmyeon uses a seafood broth and is known for its lavish garnishes.

먹기 전에 식초와 겨자를 조금 넣습니다.
Before eating, add a little vinegar and mustard.

새콤하고 알싸한 맛이 더해져 국물이 한층 산뜻해집니다.
The tangy, sharp notes make the broth noticeably brighter.

다만 처음부터 많이 넣지 말고 조금씩 넣어 맛을 보며 조절하는 편이 좋습니다.

4. How to Enjoy These Three Noodle Dishes Properly

한국 식당에서 국수를 주문할 때 알아 두면 좋은 것들이 있습니다.
There are a few things worth knowing when you order noodles at a Korean restaurant.

먼저 냉면 그릇 옆에 놓인 가위입니다.
First, the scissors placed beside the naengmyeon bowl.

이 가위는 면을 자르라고 주는 것입니다.
They are given to you for cutting the noodles.

메밀 면은 질겨서 이로 끊기 어렵기 때문에, 직원이 잘라 드릴지 물어보기도 합니다.
Buckwheat noodles are tough and hard to bite through, so the staff may even offer to cut them for you.

무례한 도구가 아니라 배려이니 편하게 사용하시면 됩니다.
They are not a rude tool but a courtesy, so feel free to use them.

칼국수 그릇 바닥에 조개껍데기가 남는 것도 자연스러운 일입니다.
It is also natural to find shells at the bottom of a kalguksu bowl.

해물칼국수의 바지락은 껍데기째 넣고 끓이기 때문입니다.
The clams in haemul-kalguksu are boiled in their shells.

살만 발라 먹고 껍데기는 한쪽에 모아 두시면 됩니다.

A1. 세 가지 모두 기본적으로 맵지 않습니다. 칼국수와 잔치국수의 국물은 맑고 담백하며, 물냉면 역시 맵지 않습니다. 다만 칼국수에 곁들여 나오는 겉절이 김치는 매울 수 있고, 함흥냉면과 비빔냉면은 매운 양념을 쓰므로 주문할 때 확인하시면 됩니다.
A1. All three are mild by default. The broths of kalguksu and janchi-guksu are clear and light, and mul-naengmyeon is not spicy either. However, the geotjeori kimchi served alongside kalguksu can be spicy, and Hamhung naengmyeon and bibim-naengmyeon use a spicy sauce, so check when you order.

Q2. 채식을 하는데 먹을 수 있는 국수가 있나요?
