Open a Korean menu and a single syllable tells you how the dish was cooked.

국, 탕, 찌개, 볶음, 구이, 그리고 찜입니다.
Guk, tang, jjigae, bokkeum, gui, and jjim.

The goal is not to cook the ingredients but to wait until the seasoning has worked its way inside them.

1. 찜이란 무엇인가
1. What Jjim Is

찜은 재료를 양념과 함께 오래 끓이거나 쪄서 만드는 조리법입니다.
Jjim is a method of simmering or steaming ingredients slowly together with seasoning.

완성되었을 때 국물이 자작하게 남아 있는 것이 특징입니다.
When it is done, a shallow layer of thick broth remains.

여기서 자작하다는 말을 설명해 드려야겠습니다.
The word jajakhada deserves an explanation.

국물이 재료를 덮을 만큼 많지도 않고 완전히 졸아붙지도 않은, 바닥에 얇게 깔린 상태를 뜻합니다.
It describes broth that neither covers the ingredients nor has cooked away, lying thinly across the bottom of the pot.

한국 요리에는 이런 감각을 가리키는 고유한 단어들이 있습니다.
Korean cooking has its own words for sensations like this.

숯불의 향이 배어든 상태를 불맛이라 하고, 만든 사람의 조리 감각을 손맛이라 부릅니다.
The trace of charcoal smoke is bulmat, and the cook's own touch is sonmat.

자작하다도 그중 하나입니다.
Jajakhada belongs to the same family.

국물의 양을 재는 단위가 아니라 눈으로 보고 판단하는 상태이며, 이 상태를 맞추는 것이 찜의 완성도를 좌우합니다.
It is not a measurement but a state judged by eye, and hitting it decides how good the jjim turns out.

조리 과정에서 실제로 일어나는 일은 이렇습니다.
Here is what actually happens while it cooks.

열이 재료의 조직을 느슨하게 풀어 놓으면, 농도가 짙은 바깥의 양념이 농도가 옅은 안쪽으로 서서히 이동합니다.
Heat loosens the structure of the ingredients, and the concentrated seasoning outside moves slowly toward the thinner interior.

삼투압이라 부르는 현상입니다.
This is osmosis.

겉에만 양념이 묻은 고기와 속까지 양념이 들어간 고기가 완전히 다른 이유가 여기에 있습니다.
It is why meat coated on the surface and meat seasoned to the core taste nothing alike.

그래서 찜은 불을 세게 다루는 요리가 아니라 시간을 다루는 요리입니다.
Jjim, then, is not about handling fire but about handling time.

찜과 찌개를 구분하시면 메뉴 고르기가 훨씬 쉬워집니다.
Telling jjim from jjigae makes ordering far easier.

찌개는 국물을 떠먹는 음식입니다.
Jjigae is eaten for its broth.

숟가락이 주로 쓰입니다.
The spoon does most of the work.

찜은 국물이 재료 안으로 들어간 뒤 남은 것을 밥에 비벼 먹는 음식입니다.
With jjim, the broth goes into the ingredients, and what remains is mixed into rice.

젓가락이 주로 쓰이고, 마지막에 숟가락이 등장합니다.
Chopsticks lead, and the spoon arrives at the end.

조리 시간도 다릅니다.
The cooking times differ too.

찌개는 십오 분이면 끓지만, 갈비찜은 두 시간을 넘깁니다.
A jjigae boils in fifteen minutes; galbijjim runs past two hours.

찜은 종류가 많습니다.
Jjim comes in many forms.

계란찜, 생선찜, 두부찜처럼 재료 이름 뒤에 찜을 붙이면 그대로 이름이 됩니다.
Add jjim after an ingredient and you have the name: gyeranjjim, saengseonjjim, dubujjim.

2. 갈비찜, 시간이 만드는 음식
2. Galbijjim, a Dish Made by Time

갈비찜은 소갈비를 간장 양념에 오래 조려 만듭니다.
Galbijjim is beef short ribs braised at length in a soy-based sauce.

무와 당근, 밤, 대추를 함께 넣는 경우가 많습니다.
Radish, carrot, chestnut, and jujube often go in with them.

이 음식의 완성 여부를 판단하는 기준은 하나입니다.
There is one test for whether it is done.

젓가락으로 살짝 당겼을 때 고기가 뼈에서 저절로 떨어지는가입니다.
Does the meat come away from the bone at a light pull of the chopsticks?

힘을 주어 뜯어야 한다면 아직 덜 된 것입니다.
If you have to tear at it, it is not there yet.

좋은 갈비찜집은 이 상태를 만들기 위해 시간을 아끼지 않습니다.
A good galbijjim restaurant does not save time getting to that point.

양념은 간장이 기본이지만 단맛이 함께 옵니다.
The base is soy sauce, but sweetness comes with it.

배나 양파를 갈아 넣어 자연스러운 단맛을 내는 집이 많고, 이 단맛이 고기의 기름진 맛을 눌러 줍니다.
Many kitchens grate in pear or onion for natural sweetness, which tempers the richness of the meat.

맵지 않아 매운 음식을 못 드시는 분도 편하게 드실 수 있습니다.
It is not spicy, so it suits anyone who avoids heat.

갈비찜에는 문화적인 무게가 있습니다.
Galbijjim carries cultural weight.

한국에서 이 음식은 명절과 잔칫날, 손님을 대접하는 자리에 오릅니다.
In Korea it appears on holidays, at celebrations, and when guests are received.

갈비가 비싸기도 하지만 손이 많이 가기 때문입니다.
Short ribs are expensive, and the dish takes real labor.

어머니가 갈비찜을 하신다는 말은 오늘이 보통 날이 아니라는 뜻입니다.
When a mother says she is making galbijjim, it means today is not an ordinary day.

식당에서 이 음식을 주문하실 때 그 배경을 알고 계시면 맛이 조금 달라집니다.
Knowing that background changes the taste a little when you order it.

돼지갈비로 만들면 돼지갈비찜이 됩니다.
Made with pork ribs, it becomes dwaeji-galbijjim.

값이 낮고 맛이 더 진한 편이라 일상적으로 먹는 쪽에 가깝습니다.
Cheaper and heavier in flavor, it sits closer to everyday eating.

 

3. 안동찜닭과 아구찜, 간장과 고추의 갈림길
3. Andong-jjimdak and Agujjim, Where Soy Parts from Chili

나머지 두 가지는 양념의 방향이 정반대입니다.
The other two head in opposite directions.

하나는 간장으로 가고, 하나는 고추로 갑니다.
One goes to soy sauce, the other to chili.

두 음식 모두 지역에서 시작되었다는 공통점도 있습니다.
Both also began in a particular place.

안동찜닭은 경상북도 안동의 구시장 골목에서 나온 음식입니다.
Andong-jjimdak came out of an alley in the old market of Andong, North Gyeongsang Province.

1990년대 후반 그 골목의 닭집들이 손님 취향에 맞춰 간장 양념과 채소를 더해 내놓기 시작한 것이 지금의 형태가 되었고, 이후 전국으로 퍼졌습니다.
In the late 1990s the chicken shops there began adding soy seasoning and vegetables to suit their customers, and that version spread across the country.

그래서 이름에 지역명이 그대로 붙어 있습니다.
The place name stayed attached to the dish.

이 음식에는 흥미로운 점이 있습니다.
One detail is worth noting.

매운맛을 내지만 고추장이나 고춧가루를 쓰지 않습니다.
It carries heat without using chili paste or chili flakes.

마른 고추를 통째로 넣어 매운맛을 뽑아내는데, 그래서 매운맛이 텁텁하지 않고 깔끔하게 지나갑니다.
Whole dried chilies draw out the heat, which passes cleanly rather than sitting heavy.

한국의 매운 음식이 부담스러우셨던 분이라면 이 방식은 다르게 느껴지실 겁니다.
If Korean spice has felt like too much before, this will feel different.

그리고 이 음식에서 사람들이 가장 좋아하는 재료는 닭고기가 아닌 경우가 많습니다.
And the favorite ingredient here is often not the chicken.

당면입니다.
It is the glass noodles.

고구마 전분으로 만든 굵은 국수인데, 양념을 가장 많이 머금기 때문입니다.
Thick noodles made from sweet potato starch, they soak up more sauce than anything else in the pot.

일행이 있으시다면 당면 쟁탈전을 각오하십시오.
If you are dining with others, expect a contest over them.

아구찜은 방향이 다릅니다.
Agujjim goes another way.

아귀라는 생선과 콩나물을 매운 양념에 버무려 쪄 냅니다.
Monkfish and bean sprouts are tossed in a spicy sauce and steamed.

경상남도 마산이 유명한 산지입니다.
Masan in South Gyeongsang Province is where it is best known.

아귀는 생김새가 험한 생선입니다.
Monkfish is a rough-looking creature.

과거 어촌에서는 그물에 걸리면 도로 바다에 버리던 물고기였다고 전해집니다.
Fishing villages once threw it back into the sea when it came up in the nets.

그것이 항구의 노동자들이 값싸게 배를 채우던 음식으로 바뀌었고, 다시 지역을 대표하는 요리가 되었습니다.
It became a cheap way for dock workers to fill up, and from there a dish that represents the region.

버려지던 재료가 매운 양념과 만나 이름을 얻은 셈입니다.
A discarded ingredient met a spicy sauce and earned a name.

아구찜의 진짜 주인공은 콩나물이라는 말도 있습니다.
Some say the real star of agujjim is the bean sprouts.

매운 양념을 머금은 채 아삭하게 씹히면서 매운맛을 중간중간 끊어 주기 때문입니다.
They hold the sauce, snap between the teeth, and break up the heat as you go.

세 가지 중 가장 맵고, 술과 함께 먹는 자리에 가장 자주 오릅니다.
It is the spiciest of the three and turns up most often alongside drinks.

 

4. 주문할 때 알아 둘 것
4. What to Know When Ordering

찜 요리를 처음 드신다면 알아 두시면 좋은 것들이 있습니다.
A few things help if this is your first jjim.

먼저 인분 단위입니다.
First, portion sizes.

찜은 대부분 2인분부터 주문할 수 있습니다.
Most jjim starts at two servings.

한 그릇씩 나오는 음식이 아니라 큰 접시에 담겨 나와 나눠 먹는 구조이기 때문입니다.
It does not arrive in individual bowls but on one large plate to share.

혼자 여행 중이시라면 식당에 1인분이 가능한지 먼저 물어보셔야 합니다.
Traveling alone, ask first whether a single serving is possible.

다음은 매운맛 조절입니다.
Next, spice level.

안동찜닭과 아구찜은 대부분 맵기를 조절해 줍니다.
Andong-jjimdak and agujjim can usually be adjusted.

순한 맛, 보통 맛, 매운맛으로 나뉘는 집이 많으니 주문할 때 말씀하시면 됩니다.
Many places offer mild, medium, and hot, so say which you want when you order.

갈비찜은 원래 맵지 않습니다.
Galbijjim is not spicy to begin with.

한국의 보통 맛은 나라에 따라 이미 매운 편일 수 있으니, 매운 음식에 익숙하지 않으시면 순한 맛부터 시작하시기를 권합니다.
Korean medium can already read as hot depending on where you are from, so start at mild if you are not used to spice.

마지막은 밥입니다.
Last, the rice.

찜을 다 드신 뒤 접시 바닥에 양념이 남습니다.
When the jjim is finished, sauce remains at the bottom of the plate.

이때 공기밥을 시켜 남은 양념에 비벼 드시는 것이 한국식 마무리입니다.
Ordering a bowl of rice and mixing it into what is left is the Korean way to close a meal.

식당에 따라 밥을 볶아 주기도 합니다.
Some restaurants will fry the rice for you.

이 과정을 건너뛰면 그 음식의 절반만 드신 셈입니다.
Skip this and you have had only half the dish.

세 가지 중 무엇을 고를지 망설이신다면 이렇게 정하십시오.
If you cannot decide among the three, use this.

A1. 국물의 역할이 다릅니다. 찌개는 국물을 떠먹는 음식이고, 찜은 국물이 재료 속으로 들어가게 만드는 음식입니다. 그래서 찌개는 국물이 넉넉하고 찜은 자작하게 남습니다. 찜을 드실 때는 남은 양념에 밥을 비벼 드시면 됩니다.
A1. The broth plays a different role. Jjigae is eaten for its broth; jjim drives the broth into the ingredients. So jjigae comes with plenty of liquid and jjim with only a shallow layer. With jjim, mix rice into what is left.
